Do the different colors mean anything?  I've seen some with red, some with blue, some with orange, etc...  Do the different colors represent the different divisions of the Republic army, or are the colors just completely random?

Correct. Wiki claims

Interesting.  So the colors do indicate rank and represent different divisions.
